So there we were
at Holmes Safari 5, incredible food being prepared all around
us by our friends, and someone (I think it was either Matt
or Erin) said, "Wouldn't it be really cool to have a
Holmes Family cookbook with everybody's recipes in it? Well...
I thought that that was just the bees knees and have had a
plan to make this page ever since. And in fact, if we get
enough recipes on here, I will personally see to it that an
actual book is made and printed! So please help make this
all a reality... we have so much to offer, let's make it happen!
Yeah, so, there
are really two parts to this page. There are food recipes
and alcoholic drink recipes. I figure both are equally important
when planning for any kind of party. So please look through
these and feel free to make any of them, expand, experiment,
and get some recognition for the awesome foods and drinks
that you have invented.

take
Salmon steak or filet, pre-heat oven to 400 degrees, chop
pistachos and put on plate, drip honey over pistachoes and
then spread pistachoe honey mix over one side of fish. Sprinkle
with a few fennel seeds and the with shredded coconut. Put
in brownie pan that has been lightly sprayed with Pam, and
cook in pre-heated oven for 15 minutes. I made it the other
night on a whim and it was awesome.

Slammin' (Everything you got) Salsa
This recipe
will make about a gallon of salsa and is intended for large
gatherings. I cant say as I'd know how to slim the portion
size down at all as that it's design is based on quantity.
I can say that it's all fresh and will last a while so if
you don't use it all, its safe to bottle it up and refridgerate
for a bit, and it also goes great on burgers or grilled chicken.

In a big
bowl or pot, empty can of stewed whole tomatos. Clean, de-seed,
and chop all peppers. Add peppers to bowl. Cut off stems of
cilantro and finely chop the rest - add to mix. Mince 3 garlic
cloves and add with lemon juice, salt, pepper, paprika, parsley
and cinnamon. Mix everything together using a large, sharp
knife, making sure to cut up the tomoatos and further chop
the rest of the ingredients. For added heat and flavor, add
2 tsp of Johnnie Walker's Scotch Bonnet hot sauce.

Holmes Page here. And DAMN... this is yummy. Its VERY easy
to make too!

Preheat
the oven to 350 degrees
In the
glass casserole dish, lay out the flounder fillets as evenly
as possible. Slice the 1/2 stick of butter into even patties
and lay on top of the fish, while distributing them evenly.
Drizzle the lemon juice around. Sprinkle around the Paprika,
pepper, crushed red pepper, salt, and if you have it, a lemon
& pepper combination spice.
Bake the
uncovered dish for 20-25 minutes until the fish is cooked
but not burnt. Remove from the oven and let cool slightly.
Then Enjoy!!! - Note: I find that this goes exceptionally
well with a spinach salad covered in 'Zesty Italian' dressing
from Kraft.

Preheat
oven to 400. Place fish in glass baking dish, cover with oil,
salt, cumin, and pepper, cover with foil and refrigerate for
about 30 minutes. Slice pepper and onion into thin, lenghtwise
strips. Slice plum tomatoes
into medium thin slices. remove fish from fridge, remove foil
(duh), cover fish with peppers, onions, tomatoes, capers and
olives. replace foil cover, and bake for 15 minutes, or until
fish is cooked all the way through.
